Boil the eggs and peel off...Mine is a basic recipe. Boil the eggs and peel off the shells. Then shallow fry them for a crispy outer side. Now heat oil, and saute cinnamon and cardamom in it. The powders work just as well. Add finely chopped onions, and a paste of ginger and garlic.Saute till golden brown,then add turmeric powder and re chilli powder, cook till the oil seperates.Next add finely chopped tomatoes, or a puree as in convenient, cook for a bit, and add enough water for a curry and add salt. Bring the entire thing to a boil, and then add potatoes(if you like them, completely optional) and the eggs, with slight slits on the sides, or even cut in halves.
